My second delicious, super easy, vegan, low-FODMAP, Christmas side dish is ginger carrots.
I’ve always loved the ginger-carrot combo, especially at Christmas because my mum always makes these as Christmas side.
If your making them for guests and want them to look more impressive, you can always use baby carrots. They also look great with fresh parsley as a garnish.
These are so easy to make, healthy and delicious. Why not give them a try?

Mama's Ginger Carrots
Ingredients
- 500 g peeled carrots
- 2 tsp extra virgin olive oil
- 1 tsp ground ginger
Instructions
- Steam the carrots, circa 5 minutes, until crisp/tender
- Make a ‘paste’ in a frying pan with the olive oil and ginger. Add the carrots, mix well and Sauté for a few minutes, turning occasionally. (Until the carrots are crisp/browning and the ginger forms a sort of ‘glaze’)
- Serve immediately. Enjoy!
