Mama's Ginger Carrots

Ingredients

  • 500 g peeled carrots
  • 2 tsp extra virgin olive oil
  • 1 tsp ground ginger

Instructions

  • Steam the carrots, circa 5 minutes, until crisp/tender
  • Make a ‘paste’ in a frying pan with the olive oil and ginger. Add the carrots, mix well and Sauté for a few minutes, turning occasionally. (Until the carrots are crisp/browning and the ginger forms a sort of ‘glaze’)
  • Serve immediately. Enjoy!
