Lemon & Chilli Dressing

It’s one of my absolute summer favourites. I particularly like it with Sebastian’s Salad, one of my go-to-summer meals. I love, love, love the smell of lemon and this dressing tastes just as good, as long as you like a little kick!

To make the dressing all you do is wash, grate and squeeze a lemon, wash and chop a chilli pepper then place all the ingredients in a small screw top jar and shake well. Easy.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp grated lemon zest
  • 1 finely chopped red chilli
  • pepper to taste

Instructions

  • To make the dressing, place all the ingredients in a small screw top jar and shake well.
  • Enjoy!
