Broccoli-puree | delicious-broccoli | tallulahs-treats | low-fodmap-vegan | tasty-vegan-recipesIf you want to make an even creamier puree, just add some plant milk of your choice, omit the lemon (optional) and add pine nuts… Heaven.

Broccoli-puree | delicious-broccoli | tallulahs-treats | low-fodmap-vegan | tasty-vegan-recipesAll you do is lightly steam the broccoli. Pulse the sunflower seeds in a blender. Add your garlic infused olive oil (goo) and tamari and plus some more. Finally add your (cooled) steamed broccoli and blend until smooth. Easy!

Broccoli & Lemon Puree

Servings 4 servings

Ingredients

  • For the puree
  • 1 cup broccoli
  • 1 tbsp garlic infused olive oil goo
  • 1/4 cup sunflower seeds
  • 2 tbsp tamari
  • 2-2.5 tbsp lemon juice

Instructions

  • Wash and cut your broccoli into small florets. Steam the broccoli until it looses its raw edge but is still crisp, I cooked mine for 4 minutes but it'll vary depending on the size of your florets
  • Pulse the sunflower seeds in a blender, add the goo, tamari and lemon juice and blend some more.
  • Add the (cooled) steamed broccoli and blend until all smooth
  • Mix with quinoa or brown rice and enjoy with toppings of your choice.
